Often around 7:30 pm I am craving something sweet but healthy and ice cream is an all time favorite of mine! Since I have changed my eating habits to include plant based ingredients only, I have been trying to figure out what non-processed, non-synthetic sweet I can enjoy (other than dates smothered in fresh ground peanut butter!) without feeling guilty. Then I found "nice cream".
The flavor combinations are endless; strawberry, chocolate, vanilla, anything!
This is chocolate "nice cream" topped with cacao nips (#navitasorganic).
Here are the ingredients and steps to take to make this sweet, healhty, and vegan treat:
3 frozen bananas (peeled and quartered), 1.5 Tbsp cocoa powder blended together in a food processor. Then top with any toppings you like: chocolate chips, goji berries, crushed nuts, you name it (I chose cacao nibs).
Other recipes that would make a similar treat include:
Blueberry: 2 cups frozen blueberries, ½ cup of yogurt alternative, ¼ cup maple syrup, 1 Tbsp fresh lemon juice. Blend all ingredients in a blender until smooth. Serve immediately, or pour the mixture in a freezable container.
Or
Rather than blueberries, use 2 Tbsp of fresh ground peanut butter and 2 frozen (peeled and quartered) bananas.
