I just love Trader Joes. Their products are truly delicious and I have no trouble at all finding #veganfriendly options.
I made a curry with tons of veggies and opted to add in some #vegan dumpligs, too.
Ingredients:
2 tablespoons of water
2 tablespoons of diced white onion
1/4 cup of diced carrots
1/4 cup of green bell pepper
1/3 of an egg plant diced in bite sized pieces
1/2 zucchini cut into bite sized pieces
1/3 cup of coconut milk
3 tablespoons of Trader Joe's Thai green curry sauce
2 tablespoons of water
Trader Joe's veggie dumplings (5)
Chopped cilantro to garnish
A cup of spinach
Red chili flakes (to taste)
1 cup of kale, roughly chopped
Instructions:
-I always start off by cooking white onion in about a tablespoon of water to make the onion translucent.
-Next, I added in the carrot, pepper, red chili flakes, and egg plant to soften. About 4 minutes.
-I then added in the zucchini and the green curry sauce, along with about 1/3 cup of coconut milk and the 2 tablespoons of water (more if you want a thinner broth).
-I added in 5 dumplings to the pan, ensuring they were covered by the liquid and allowed the dumplings to warm through and simmer for about 6 minutes.
-Then I added in the spinach to wilt and warm.
-Lastly, I poured the curry on top a bowl of leafy kale, garnished with cilantro, and enjoyed using my chopsticks!
This makes about 2 servings, but good luck not consuming the whole thing right away!
