Yesterday was Greece's Day of celebrating their Independence. My #fiance and I celebrated by enjoying a few of our favorite foods that are Greek inspired or remind us of our trip to Greece.
We made a cucumber salad, enjoyed #traderjoes giant beans in tomato sauce, #falafel, and their #dolmas.
The cucumber salad is composed of: diced cucumber (1/2 large cucumber), diced tomato (3 medium), 6 pitted kalamata olives, 1/8 a red onion diced, oregano, salt, pepper, and 1/2 a lemon squeezed on top.
We really enjoyed this meal, as we were able to make it how we wanted for our own individual plates- mine was the salad in the bottom left, Ty had a pita pocket and stuffed falafel and the cucumber salad.
We plated these dishes in my #spanishceramics to bring in even more beautiful Mediterranean colors.
