Feeling nastalgic and needing a true, family comfort food? I went right for what my family calls Caryn's Crack. This chocolatey, buttery, salty goodness truly is as addicting as crack (I'm guessing).
This recipe is literally 3 ingredients, vegan, and SO EASY, so give it a go!
Your only ingredients include: Saltines, Vegan Butter (I used Earth's Balance), and #dairyfree chocolate chips (I used Enjoy Life).
Caryn's original recipe is not #vegan, so I modified it :)
Recipe steps:
1. Line a baking dish with parchment paper and preheat your oven to 350 degrees.
2. Lay saltines in a flat layer in the baking dish.
3. Heat up about 2 tablespoons of vegan butter in a shallow pan, then pour over the saltines.
4. Bake the saltines in butter for approximately 7 minutes- until lightly browned.
5. Take the vegan chocolate chips and pour the bag over the whole, hot baking dish. Let the chocolate warm up from the already hot saltines in butter (don't put the dish back in the oven- in fact, you can turn your oven off!). Then spread the chocolate.
6. Sprinkle a pinch of coarse sea salt if desired.
7. Let the baking dish cool slightly, then place the parchment paper & Cary's Crack it in the freezer for about 30 minutes.
8. Take the "crack" out of the freezer and break apart into approximately 1 inch by 1 inch pieces.
9. Try not to eat it all in one sitting! I had a hard time not eating every small 3 cm piece that broke off :) Enjoy!
