I've been on a curry craving lately, and my Instagram seems to notice it. I was scrolling through and saw @alexafuelednaturally 's post and just couldn't help but create my own version.
Here it is, my creamy red curry with tofu- inspired by @veganrecipescom
I sautéed onion, garlic, ginger, carrots, red bell pepper to soften.
Added in veggie broth, coconut milk, diced tofu, and broccoli to warm.
Then comes the best part: taking a 1/2 cup of the broth and blending with a roasted red pepper and coconut cream to make this truly creamy! Add the red cream to the rest of the broth. I topped with spinach and cilantro for a garnish. Enjoy!
