I love going to #realgoodjuice in Lakeview, IL on Saturday mornings for a #smoothiebowl. Since I am now a completely plant-based diet, I decided to make my own version of their granola so that it does not include honey. This is my version of the recipe- it is great, but still not as amazing as theirs!
Recipe Ingredients:
2.5 cups steel cut oats, 1 cup unsweetened coconut flakes, 1 cup chopped raw almonds, 5 Tbsp sweetener of choice (coconut nectar or maple syrup), ¼ tsp salt, ¼ cup coconut oil, ½ cup fresh ground peanut butter, 1/3 cup dairy-free chocolate chips (optional)
Preheat the oven to 340 degrees. Mix the oats, coconut flakes, salt and almonds in a bowl. In a small skillet warm the coconut oil, nut butter, and sweetener and pour over the dry ingredients. Spread the mixture evenly on a large baking sheet (I line mine with my silicon liner) and bake for 23 minutes. Stir a bit near half way to ensure even cooking. Remove from the oven and let the granola cool. If you are adding dairy-free chocolate chips, add 2 minutes after removing from the oven, that way the chocolate can melt slightly.
