Lean Mean Green Smoothie with Stewed Apples


Smoothie: Add 1 frozen banana, ½ tsp of maca and spriulina powders, 1/3 cup frozen kale (I blend the kale with coconut water and then freeze in silicon cups), ½ cup frozen cauliflower (cut, boil, and freeze), one soaked and softened date (soak in hot water about 5 minutes), julienned mint, vegan vanilla protein powder, and coconut water into a blender- pulse until creamy and think.

Stewed Apples: cut an apple and add ½ cup of water to a small sauce pan. Warm and cook until the water completely evaporates and the apples are soft and caramelized. Add cinnamon.

Then pour the smoothie into a bowl (I added overnight oats, too!), then top with the stewed apples, and finally sprinkle some cinnamon on top.
