Roast the eggplant with a drizzle of EVOO on parchment paper at 350 degrees for about 7 mins. I then added a spoon full of tomato sauce on top and roasted for about 5 mins more. I cooked lentil pasta according to the package. Chopped up some parsley and black olives. Then while the pasta cooked I lay one slice of @daiyafoods provolone on top of each eggplant slice and broiled on high for 6 minuets.
