To ensure that there was something I could eat and enjoy during the SuperBowl party I attended, I made/brought some #vegan, butternut squash filled #jalapenopoppers.
They were such a hit, and I was so proud!
Ingredients:
Approximately 20 jalapenos, sliced long in half
1/3 bushel of fresh cilantro
2 cups of diced, steamed butternut squash
Jen's Nacho Cheese ingredients (omit the Dijon)
Recipe Steps:
Slice the jalapenos in half, long and remove all of the seeds and ribs!
Roast the jalapenos in the oven for approximately 10 minutes to tenderize.
Make my Nacho Cheese with butternut squash. Omit the Dijon and add in the 2 cups of butternut squash.
Spoon the "cheese" into each jalapeno, fill to the rim.
Bake the jalapeno poppers (about 10 minutes at 400 degrees) right before serving.
Coarsely chop cilantro for garnish.
